    Add chicken, cheeses and remaining ingredients to the mixing bin and process until thoroughly blended

    Using the #26 horn extrude the mixture into the casings and twist off into four- inch links

    Poke several holes down the length of each sausage

    Refrigerate and use within three to four days or freeze for later use.

ingredients

  • 2 pounds ground chicken
  • 1/4 cup minced onion
  • 2 cloves garlic, minced
  • 1/4 cup ricotta cheese
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup grated Fontina or Muenster cheese
  • 2 teaspoons minced fresh basil
  • 2 teaspoons minced fresh parsley
  • 1 chicken bouillon cube, dissolved in 2
  • tablespoons hot water
