- 1/4 cup minced dried apricots
- 2 tablespoons minced shallots
- 2 teaspoons minced fresh thyme
- 1 teaspoon sugar
- Pinch cayenne
- 1 teaspoon salt
- 1/4 teaspoon freshly ground white pepper
- 2 tablespoons dry white wine or cold water
