Remove the loose leaves from the outside of the garlic head, making sure the head remains intact

Trim off the top to expose the garlic cloves

Place the garlic on a piece of aluminum foil and drizzle the cut surface with the olive oil. Wrap the head and bake at 375 F

For 45 minutes or until the garlic is very soft

Cool garlic completely and then squeeze the soft pulp out of the cloves. Mash the green peppercorns in a mortar and pestle or with the back of a spoon

Add the turkey, roasted garlic, green peppercorns and remaining ingredients to the mixing bin and process until thoroughly blended. Using the #26 horn extrude the mixture into the casings and twist off into four inch links

Poke several holes down the length of each sausage

Refrigerate and use within three to four days or freeze for later use.

ingredients
- 1 head garlic
- 1 teaspoon olive oil
- 2 tablespoons green peppercorns packed in
- brine, rinsed
- 1-1/4 pounds ground turkey
- 2 egg whites, beaten
- 1/2 cup minced onion
- 1/3 cup ketchup
- 1 tablespoon soy sauce
- 2 teaspoons Dijon mustard
- 1-1/2 teaspoons salt
- 1-1/2 cups fresh bread crumbs
- 1/2 cup milk
