Cut the oysters into small pieces and place in a food processor

Process as finely as possible

Add the oysters, veal and remaining ingredients to the mixing bin and process until thoroughly blended

Using the #20 horn extrude the mixture into the casings and twist off into four- inch links

Poke several holes down the length of each sausage

Refrigerate and use within three to four days or freeze for later use.

- 2 cups chopped raw oysters
- 1 pound ground veal
- 1/4 teaspoon freshly grated nutmeg
- 2 teaspoons salt
- 1 teaspoon freshly ground white pepper
- 1/2 cup plain dry bread crumbs
