    Add the pork and remaining ingredients, except the shrimp, to the mixing bin and process until thoroughly blended

    Add the shrimp and process another 20 seconds

  • 3

    Using the #26 horn extrude the mixture into the casings and twist off into four-inch links

  • 4

    Poke several holes down the length of each sausage

  • 5

    Refrigerate and use within two days or freeze for later use.

Asian Pork and Shrimp Sausage

ingredients

  • 1 pound ground pork
  • 1 egg, beaten
  • 2 teaspoons minced fresh ginger
  • 1 clove garlic, minced
  • 2 tablespoons minced fresh cilantro
  • 1 tablespoon soy sauce
  • 1/4 teaspoon Oriental sesame oil
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground white pepper
  • 1 pound raw shrimp, peeled,
  • deveined and chopped
