    Add the ground duck, bacon, and chicken and remaining ingredients to the mixing bin and process until thoroughly blended

    Using the #26 horn extrude the mixture into the casings and twist off into four-inch links

    Poke several holes down the length of each sausage

    Refrigerate and use within three to four days or freeze for later use

Chinese Roasted Duck Sausage

ingredients

  • One 3-pound roasted duckling, meat and skin
  • removed and coarsely ground
  • 1 slice bacon, ground with duck
  • 3/4 pound ground chicken
  • 2 tablespoons minced fresh cilantro
  • 2 tablespoons minced green onions
  • 2 tablespoons minced waterchestnuts
  • 1 tablespoon minced garlic
  • 1 tablespoon Hoisin Sauce*
  • 2 teaspoons sugar
  • 1 teaspoon Oyster sauce*
  • Pinch cayenne pepper
  • 1/2 teaspoon salt
