Simmer the onions in water to cover until translucent, 5 to 7 minutes

Cool under cold running water and drain

When completely cool, slice bacon crosswise in one-inch pieces and grind with onions in food processor

Add ground turkey, chicken, bacon and onion mixture and remaining ingredients to the mixing bin and process until thoroughly blended

Using the #26 or #29 horn extrude the mixture into the casings and twist off into four-inch links

Poke several holes down the length of each sausage

Refrigerate and use within three to four days or freeze for later use.

ingredients
- 1-1/2 cups sliced onions
- 1/4 pound bacon
- 1 pound ground turkey
- 3/4 pound ground chicken
- 1 tablespoon chopped garlic
- 3 tablespoons paprika
- 2 teaspoons dried thyme
- 1 teaspoon dried sage
- 1 teaspoon dried oregano
- 1 teaspoon sugar
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon dry mustard
- 1/4 teaspoon cayenne pepper
- 1/8 teaspoon ground allspice
- 2 teaspoons salt
- 1/2 teaspoon freshly ground black pepper
