    Place tequila, triple sec, lime juice and vegetable oil in a medium bowl

    Whisk to combine

    Stir in the jalapeno, lime zest, chili powder, sugar and salt

    Let stand 15 minutes before using as a marinade. Yield: 3/4 cup SUGGESTED USE: With the zing of a real Margarita this marinade is delicious on shrimp or scallops (30 to 60 minutes) or boneless chicken breasts (1 to 3 hours) or chicken pieces (3 to 4 hours).

  • 3 tablespoons fresh lime juice
  • 1 /4 cup vegetable oil
  • 1 large jalapeno chili, seeded, minced
  • 1 -1 /2 teaspoons grated lime rind (zest)
  • 1 teaspoon chili powder
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
