    Add the pork, pepperoni, cheese and remaining ingredients to the mixing bin and process until thoroughly blended

    Using the #26 or #29 horn extrude the mixture into the casings and twist off into four-inch links

    Poke several holes down the length of each sausage

    Refrigerate and use within three to four days or freeze for later use.

  • 1-1/4 pounds ground pork
  • 1/4 pound pepperoni,
  • diced in 1/4-inch cubes
  • 1/4 pound mozzarella cheese
  • diced in 1/4-inch cubes
  • 1 egg, beaten
  • 1-6 ounce can tomato paste
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons milk
