- 1/2 cup freshly grated Parmesan cheese
- 1 clove garlic, minced
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground coriander
- 1/4 teaspoon grated lemon zest (rind)
- 1/4 teaspoon grated orange zest (rind)
- 1-1/2 teaspoons salt
- 1/2 teaspoon freshly ground black pepper
- 1/3 cup dry vermouth
