    Add the pork, cheese and remaining ingredients to the mixing bin and process until thoroughly blended

    Using the #26 horn extrude the mixture into the casings and twist off into four- inch links

    Poke several holes down the length of each sausage

    Refrigerate and use within three to four days or freeze for later use.

ingredients

  • 2 pounds ground pork
  • 1/2 cup freshly grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon grated lemon zest (rind)
  • 1/4 teaspoon grated orange zest (rind)
  • 1-1/2 teaspoons salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/3 cup dry vermouth
