    Add the pork or turkey and remaining ingredients to the mixing bin and process until thoroughly blended

    Using the #26 cone extrude the mixture into the casings and twist off into four to six-inch links

    Poke several holes down the length of each sausage

    Refrigerate and use within three to four days or freeze for later use.

  • 1-1/2 teaspoons fennel seed, slightly crushed
  • 1 teaspoon crushed red pepper flakes
  • 2 teaspoons salt
  • 2 teaspoons freshly ground black pepper
  • 1/4 cup cold water
