Cut bacon crosswise into one-inch pieces

Process the bacon in the food processor, pulsing until finely chopped

Add chopped bacon, pork and remaining ingredients to the mixing bin and process until thoroughly blended

Using the #20 cone extrude the mixture into the casings and twist off into three to four-inch links

Poke several holes down the length of each sausage

Refrigerate and use within three to four days or freeze for later use.

- 1/4 pound cold bacon
- 1-3/4 pounds ground pork
- 1/2 teaspoon chili powder
- 1/2 teaspoon marjoram
- 1/4 teaspoon thyme
- 1/4 teaspoon ground coriander
- 2 cloves garlic, minced
- 1-1/2 teaspoons salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup cold water
