    There are many types of chilies, varying in hot- ness, from extremely fiery types to mild chilies

    The small, wiry chilies are often very hot; canned jalapeno chilies are fairly mild

    As well as heat, chilies have a distinct peppery flavor which is most apparent in the milder types

    The seeds are especially hot, so cut out the core and rinse away all seeds before use

    Always wash your hands after handling chilies as their juices are highly irritating, causing an excruciating, burning sensation when it comes in contact with sensitive areas, such as eyes, or any grazed skin or cuts.
