    Place yogurt, lemon juice and zest in a small bowl

    Whisk until smooth

    Add the mint, garlic, salt, cinnamon, cayenne and allspice

    Keeps in the refrigerator 1 day before using as a marinade. Yield: 2 cups SUGGESTED USE: Perfect for both chicken pieces (2 to 4 hours) or boneless breasts (1 to 3 hours) or leg of lamb (4 to 8 hours) or lamb brochettes (2 to 4 hours).

Turkish Yogurt Marinade

  • 1 cup plain yogurt
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon grated lemon rind (zest)
  • 1 cup chopped fresh mint
  • 2 large cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper
