Make macaroni, cook until al dente, drain and set aside

Heat butter in medium skillet and stir in the apples and sprinkle with brown sugar

Saute, stirring, until apples are glazed and slightly caramelized

Beat the cottage cheese and the sugar until fairly smooth

Lightly butter a 2-quart shallow baking dish

Fold the macaroni and the apples together and spread in bottom of the baking dish

Set the dish in a larger baking pan and add 1 inch of hot water

CARAMELIZED APPLE-CINNAMON NOODLE PUDDING
ingredients
- 1 half load of pasta dough made into macaroni
- 2 tablespoons butter or margarine
- 2 cups apples cut into 1/4 to 1/2-inch pieces
- 2 tablespoons light brown sugar
- 2 tablespoons golden raisins
- 1/4 teaspoon ground cinnamon
- 1 cup small curd creamed cottage cheese
- 1/2 cup sugar
- 3 eggs
- 2 cups milk, scalded
- 1 teaspoon vanilla extract
- pinch of nutmeg
