Make fettuccini and cook until almost al dente

Drain and set aside

Heat oil in a wok or a large frying pan and stir-fry ginger and garlic for 1 to 2 minutes

Add onion and carrot and stir-fry for 4 to 5 minutes longer

Toss in celery, bean sprouts and snow peas and cook for another 2 to 3 minutes

Stir in noodles and cook for 3 to 4 minutes or until noodles are heated

Season to taste with black pepper and serve immediately.

- 1 full load of udon pasta dough made into fettuccini
- 1 tablespoon peanut oil
- 2 teaspoons grated fresh ginger
- 1 clove garlic, crushed
- 1 onion, sliced
- 1 carrot, sliced diagonally
- 3 stalks celery or bok choy, sliced diagonally
- 2 cups bean sprouts
- 1/2 pound snow peas, trimmed
- freshly ground black pepper
