penne and set aside

In large skillet, melt butter and saute onions, mushrooms and prosciutto for 3-5 minutes

Stir in cream and pepper

Heat to boiling then lower heat and simmer for 6-8 minutes or until sauce thickens slightly

Remove from heat

Meanwhile, cook penne until al dente, drain and transfer to a heated serving dish

Toss warm pasta with Parmesan

Pour prosciutto mixture over pasta and toss until evenly mixed

Serve immediately, sprinkled with additional Parmesan.

ingredients
- 1 full load of pasta dough made into penne
- 1/4 cup unsalted butter
- 1/4 cup minced green onions
- 1/4 pound mushrooms, sliced
- 1/2 pound prosciutto, cut into 1/4-inch julienne strips
- 1-1/2 cups heavy cream
- 1/2 teaspoon freshly ground black pepper
- 3/4 cup freshly grated Parmesan cheese
