In large, heavy kettle, saute onion and garlic in butter and oil until transparent

Add beef, pork and veal, and brown over medium heat

Add green pepper, mushrooms, tomato paste, tomatoes, Worcestershire, bitters, sugar, wine, salt, pepper, celery salt, bay leaves and cayenne pepper

Simmer over low heat for 3 hours

Make linguini, cook until al dente, drain and transfer to warmed individual plates and top with sauce

Sprinkle with Parmesan to taste.
SENSATIONAL LINGUINI
ingredients
- 1 full load of pasta dough made into linguini
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1/4 cup butter or margarine
- 1 tablespoon olive oil
- 1/2 pound ground sirloin
- 1/2 pound lean ground pork
- 1/2 pound ground veal
- 1/2 green bell pepper, chopped
- 1/2 pound mushrooms, chopped
- 2 (6-ounce) cans tomato paste
- 1 (28-ounce) can stewed Italian tomatoes
- 1-1/2 teaspoons Worcestershire sauce
- 1-1/2 teaspoons angostura bitters
- 1 tablespoon sugar
- 1/2 cup dry red wine
- salt and freshly ground black pepper to taste
- 1/2 teaspoon celery salt
- 2 bay leaves
- dash of cayenne pepper
- freshly grated Parmesan cheese
