Make spaghetti and set aside

Prepare Tomato- Onion Sauce; keep warm over low heat

In a medium-size bowl, beat egg until blended

Add bread crumbs, 1/3 cup of the Parmesan cheese, and poultry seasoning; stir until blended

Add turkey; mix lightly until well combined

Shape turkey mixture into 4 patties, each about 4 inches in diameter

Melt butter and oil in a wide frying pan over medi- um-high heat

Add turkey patties and cook for about 8 minutes, turning once, until browned on both sides

Transfer patties to a shallow rimmed baking pan or broiler pan

Spread each patty with 2 tablespoons of the Tomato-Onion Sauce

Top patties with 1 slice of the mozzarella cheese and 1 tablespoon of the remaining Parmesan cheese

Just before broiling the patties, cook spaghetti until al dente, drain and remove to a heated serving platter

Meanwhile, broil turkey patties about 4 inches below heat until cheese is melted and lightly browned about 3 to 4 minutes

Spoon remaining Tomato-Onion Sauce over spaghetti, then top with turkey patties

Garnish with parsley sprigs, if desired

Serve with remaining Parmesan cheese to add to taste.
SPAGHETTI WITH TURKEY PARMESAN
ingredients
- 1 full load of pasta dough made into spaghetti Tomato-Onion Sauce (recipe follows)
- 1 egg
- 1/2 cup soft bread crumbs
- 1-1/3 cups (about 7 ounces) grated Parmesan cheese
- 1/2 teaspoon poultry seasoning
- 1 pound ground turkey
- 1 tablespoon butter or margarine
- 1 tablespoon olive oil
- 1/4 pound mozzarella cheese, sliced
- Italian (flat-leaf) parsley sprigs (optional)
