Make fettuccini, cook until al dente, drain and place in a heated serving dish

In a large skillet, melt butter and saute shrimp, green onions and garlic over moderate heat for 3-4 minutes, or until shrimp are firm and opaque

Remove pan from heat

Stir warm fettuccine into shrimp mixture

In medium bowl, beat egg yolks, half and half and Parmesan

Add egg yolk mixture to shrimp mixture and cook over moderate heat until sauce thickens, about 3-4 minutes

Do not boil

Stir in parsley, salt and pepper

SHRIMP ALFREDO
ingredients
- 1 full load of pasta dough made into fettuccini
- 1/4 cup butter or margarine
- 1 pound medium shrimp, peeled and de-veined
- 1 tablespoon minced green onions
- 2 cloves garlic, minced
- 5 egg yolks
- 1-1/2 cups half and half
- 1-1/2 cups freshly grated Parmesan cheese
- 1/4 cup fresh parsley, minced
- 1/2 teaspoon salt
- freshly ground black pepper to taste
