Make fettuccini and set aside

Cut the red pepper strips about the same width as the fettuccini

Heat oil in a medium skillet and add red peppers

Saute over medium-high heat 5 minutes, or until peppers begin to blister and brown on the edges

Stir in the garlic and anchovy fillets

Saute 2 minutes, stirring, to dissolve the anchovies

Add the scallops then saute over high heat until just cooked through about 3 minutes

Adjust heat so that the other ingredients don't brown

Meanwhile, cook fettuccini until al dente, drain and place in a heated serving dish

Toss with the scallop mixture and sprinkle with sliced green onions before serving.
FETTUCCINE WITH SCALLOPS, RED PEPPER, AND ANCHOVY SAUCE
ingredients
- 1 full load of pasta dough made into fettuccine
- 6 tablespoons olive oil
- 2 medium red bell peppers (about 12 ounces),seeded and cut into 1/4-inch strips
- 2 garlic cloves, crushed
- 4 anchovy fillets, finely chopped
- 12 ounces bay scallops OR sea scallops, halved or quartered
- 1/4 cup thinly sliced green onions, both white and green parts
