Make cannelloni according to instructions for cutting pasta shapes in the Making Pasta chapter

You'll need about 18 squares, 4 x 4-inch

Cook the pieces of pasta, a few at a time if necessary, until al dente

Drain and rinse under cold water, then lay out on double-thick paper towels

Preheat the oven to 350? F

To make stuffing, mix meat, eggs, 1/4 cup cheese, breadcrumbs, and parsley together until well-blended

Add salt and pepper to taste

Place some of the sirloin mixture on a piece of pasta, then roll it up into a neat tube

Place cannelloni, seam side down, in shallow ovenproof baking dish that has a little marinara sauce covering the bottom

Repeat with the remaining pasta and filling

Ladle remaining marinara sauce over the cannelloni, then sprinkle with the remaining cheese

Cover with foil and bake for 1 hour.
SIRLOIN STUFFED CANNELLONI
ingredients
- 1 full load of pasta dough made into cannelloni
- 1 pound ground sirloin
- salt and pepper to taste
- 3 large eggs
- 1/2 cup grated Parmesan cheese
- 1/2 cup bread crumbs
- 1 tablespoon chopped parsley or flakes
- 2 cups of marinara sauce (see recipe page 46)
