WHITE WINE SAUCE

    Saute onion, bay leaf and parsley in butter stirring often until onion is softened but not brown

    Add mushrooms, then stir in flour

  • 3

    Gradually stir in wine and chicken broth and bring to a boil

  • 4

    Sauce will be very thick

  • 5

    Cover pan and cook gently for about 15 minutes

  • 6

    Add salt and pepper to taste and beat vigorously

  • 7

    Remove bay leaf and parsley

  • 8

    Stir in the cream and heat gently

  • 9

    Do not boil.

  • 1/4 cup butter or margarine
  • 1 onion, finely chopped
  • 1 bay leaf
  • 3 parsley sprigs with stems
  • 1 cup mushrooms, thinly sliced
  • 1/3 cup flour
  • 1-1/4 cups dry white wine
  • 1 cup chicken broth
  • salt and freshly ground white or black pepper
  • 1-1/4 cups of cream
