    Make penne and set aside

  • 2

    Trim any roots and thick stems from the arugula

  • 3

    Wash the arugula in several changes of cold water and drain well

  • 4

    There should be about 3 cups packed

  • 5

    Heat the olive oil in a large skillet

  • 6

    Add the red onion and cook, stirring, until tender, about 5 minutes; do not brown

  • 7

    Add the garlic and cook 1 minute

  • 8

    Stir in the arugula leaves and cook, stirring, until wilted and coated with the oil, about 2 minutes

  • 9

    Meanwhile, cook penne until al dente and drain reserving about 1/2 cup of the pasta cooking liquid in a large serving bowl

    Add drained pasta to the serving bowl

  • 11

    Add the arugula mixture and toss

  • 12

    Sprinkle with the Parmesan cheese and serve.

  • 1 full load of pasta dough made into penne
  • 2 small bunches of arugula
  • 2 tablespoons extra virgin olive oil
  • 2/3 cup thinly sliced red onion
  • 1 garlic clove, crushed
  • 2 tablespoons grated Parmesan cheese
