Heat olive oil in a large skillet

Add the onion and cook over medium-low heat, stirring, until tender, 3 to 5 minutes

Do not brown

Add the garlic and cook 1 minute longer

Add tomatoes with their juices

Bring to a boil, breaking up the tomatoes if they have not been pureed

Simmer over medium heat, stirring occasionally until slightly thickened, about 25 minutes

Stir in the parsley, oregano, salt and pepper

LIGHT MARINARA SAUCE
ingredients
- 1 tablespoon olive oil
- 1/4 cup finely chopped onion
- 1 small garlic clove, crushed
- 1 (28 ounce) can Italian-style plum tomatoes,with their juices, pureed if desired
- 2 tablespoons parsley or fresh basil, chopped
- 1 teaspoon minced fresh oregano or thyme
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
