Make spaghetti and set aside

In a large saucepan, heat olive oil for 1 minute over moderate heat

Add onion, carrot, celery, and garlic, and cook, stirring frequently, until the onion is soft, about minutes

Add ground sirloin and cook, stirring, until browned, about 3 to 5 minutes

Add tomatoes, basil, and pepper, reduce heat to low, and simmer, uncovered, stirring occasionally, for 1 hour or until thickened

When sauce has only about 10 minutes longer to simmer, cook the spaghetti, drain well and place in a large heated serving bowl

Add the sauce and toss well

SPAGHETTI WITH MEAT AND TOMATO SAUCE
ingredients
- 1 full load of pasta dough made into spaghetti
- 1 tablespoon olive oil
- 1 medium-size yellow onion, chopped fine
- 1 medium-size carrot, peeled and chopped fine
- 1 small stalk celery, chopped fine
- 2 cloves garlic, minced
- 1/2 pound very lean ground sirloin
- 3 (16 ounce) cans low-sodium tomatoes,chopped, with their juice
- 2 tablespoons minced fresh basil or
- 1 teaspoon dried basil, crumbled
- 1/4 teaspoon black pepper
