Make tortellini according to instructions for making stuffed pasta in the Making Pasta chapter

Cook tortellini until al dente and drain thoroughly

Meanwhile, heat the chicken broth in a medium saucepan

Add greens and cook until tender

Add drained tortellini to the broth

Bring to a gentle boil

Ladle into soup bowls and sprinkle grated Parmesan cheese over each serving.
TORTELLINI IN BROTH
ingredients
- 1 full load of pasta dough made into cheese,
- spinach or meat tortellini ( see recipe in stuffed and specialty chapter)
- 2 quarts reduced-sodium chicken broth
- 2 tablespoons grated Parmesan cheese
- 3 cups spinach, arugula or watercress leaves
