    Make macaroni and set aside

    In a large skillet heat the oil; add the onion, celery, and peppers

    Saute until the peppers begin to brown

  • 4

    Add the zucchini, eggplant, salt, pepper, and oregano

  • 5

    Mix well and let simmer until tender

  • 6

    Add the capers, olives and marinara sauce

  • 7

    Mix well, cover and let simmer

  • 8

    Add the wine and basil, cover and let simmer for 3 more minutes

  • 9

    Cook macaroni until al dente and drain

  • 10

    Add to sauce and serve.

ingredients

  • 1 full load of pasta dough made into macaroni
  • 1/2 cup olive oil
  • 1 yellow onion, chopped
  • 1/2 cup chopped hearts of celery
  • 3 bell peppers cut into 1 inch squares
  • 2 zucchini, peeled and diced
  • 1 medium eggplant, peeled and diced
  • 1 teaspoon dried oregano
  • 1/3 cup capers
  • 1/2 cup ripe olives, sliced
  • 4 cups marinara sauce (see recipe page 46)
  • 1/2 cup red wine
  • 1 tablespoon dried basil
  • salt and freshly milled black pepper to taste
