Make tortellini according to instructions for preparing filled pasta in the Making Pasta chapter

Cook until al dente, drain, set aside and keep warm

To make avocado cream sauce, place avocado, cream, Parmesan cheese and lemon juice in a food processor or blender and process until smooth

Season to taste with black pepper

Place tortellini in a warm serving bowl, add avocado cream and toss to combine

Serve immediately

This sauce has a tendency to discolor so make just prior to serving.
TORTELLINI AVOCADO CREAM
ingredients
- 1 full load of pasta dough made into cheese tortellini ( see recipe page 143)
- 1/2 ripe avocado, pitted and peeled
- 1/4 cup cream
- 1/8 cup grated fresh Parmesan cheese
- 1 teaspoon lemon juice
- freshly ground black pepper
