Make pasta and cook until al dente

Drain and rinse thoroughly to cool

Place in a large mixing bowl and set aside

Using food processor fitted with steel blade, finely chop vegetables and parsley separately, using pulsing action

Or chop by hand

As each vegetable is chopped, add to pasta

Add tuna

In the food processor or blender, combine mayonnaise, oil and lemon juice

Process until well mixed

Stir in pickle relish, if desired

Pour mayonnaise mixture over pasta

Mix well

Season generously with pepper and a little salt, if needed

Salad is best served immediately but can be refrigerated for several hours before serving.
TUNA MACARONI SALAD
ingredients
- 1 full load of pasta dough made into macaroni
- 2 large stalks celery
- 1 large carrot, trimmed and peeled
- 1/2 onion
- 1 cup fresh parsley, chopped
- 1 (7 ounce) can water-packed tuna, drained
- 3/4 cup mayonnaise
- 1 tablespoon extra-virgin olive oil
- juice of 2 lemons
- 2 tablespoons pickle relish (optional)
- salt and freshly ground black pepper to taste
