Make pasta and cook until al dente

Drain and rinse thoroughly to cool

Place in a large mixing bowl

Add mixed vegetables, and onion; mix well

In a small bowl, combine the mayonnaise, lemon juice, sugar, dill weed, salt, and pepper; blend well

Pour the mayonnaise mixture over the pasta- vegetable mixture and toss lightly

Add optional ingredients if desired

Chill thoroughly

Serve over lettuce and garnish with paprika

If you're not serving the salad immediately, add an additional 1/4 cup mayonnaise to moisten just before serving.
SUMMER PASTA SALAD
ingredients
- 1 full load of pasta dough made into macaroni
- cut into 1/2-inch pieces
- 1 (16 ounce) package frozen mixed vegetables,
- thawed and drained
- 1/4 cup finely chopped onion
- 2/3 cup mayonnaise
- 2 tablespoons lemon juice
- 2 teaspoons sugar
- 1 teaspoon dried dill weed
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup cooked chicken or beef, diced (optional)
- 3/4 cup diced cheddar or jack cheese
