    Prepare pasta according to instructions for making pasta shapes in the Making Pasta chapter

    Cook until al dente

  • 3

    Drain and rinse thoroughly to cool

  • 4

    Place in large mixing bowl and toss with 1 tablespoon of olive oil

    Add remaining ingredients and toss again

  • 6

    Add salt and pepper to taste

  • 7

    This salad should be served immediately, however, it will keep for several hours refrigerated

    Serve at room temperature

  • 9

    Revive flavors, if necessary, with additional lemon juice

  • 10

    Garnish with more dill and/or caviar if desired.

SMOKED SALMON PASTA SALAD

ingredients

  • 1 full load pasta dough made into bowties or butterflies
  • 3 tablespoons extra-virgin olive oil
  • 12 ounces high-quality smoked salmon, cut into thin strips
  • 1-1/2 cucumbers, peeled, seeded and sliced
  • 1/2 red bell pepper, seeded and diced
  • 1-1/4 cup frozen peas
  • 5 green onions, trimmed and chopped
  • 1/4 cup chopped fresh dill juice of 3 lemons
  • salt and freshly ground black pepper to taste
