Make pasta and cook until al dente

Drain (in wire mesh strainer) and rinse thoroughly to cool

Place in large mixing bowl

To make dressing, whisk oil, lemon juice, lemon zest, salt, pepper, and garlic until blended

Toss diced and chopped vegetables, pasta, and dressing together

Serve warm or at room temperature.
CONFETTI SALAD
ingredients
- 1 half load of pasta dough made into vermicelli
- or oriental noodle cut into 1/4 -inch pieces
- 1/3 cup olive oil
- 3 tablespoons fresh lemon juice
- 1/2 teaspoon grated lemon zest
- 1/2 teaspoon salt
- 1/8 teaspoon coarsely ground black pepper
- 1 garlic clove, crushed
- 1 medium carrot, cut into 1/8-inch dice
- 1-1/4 cups finely diced red, green,
- and/or yellow bell pepper
- 1/2 cup peeled, seeded, finely diced cucumber
- 1/4 cup finely chopped scallions
- 1/4 cup finely chopped red onion
- 1/4 cup finely chopped Italian flat-leaf parsley
