    Make pasta and cook until al dente

    Drain (in wire mesh strainer) and rinse thoroughly to cool

  • 3

    Place in large mixing bowl

  • 4

    To make dressing, whisk oil, lemon juice, lemon zest, salt, pepper, and garlic until blended

  • 5

    Toss diced and chopped vegetables, pasta, and dressing together

  • 6

    Serve warm or at room temperature.

CONFETTI SALAD

ingredients

  • 1 half load of pasta dough made into vermicelli
  • or oriental noodle cut into 1/4 -inch pieces
  • 1/3 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 1/2 teaspoon grated lemon zest
  • 1/2 teaspoon salt
  • 1/8 teaspoon coarsely ground black pepper
  • 1 garlic clove, crushed
  • 1 medium carrot, cut into 1/8-inch dice
  • 1-1/4 cups finely diced red, green,
  • and/or yellow bell pepper
  • 1/2 cup peeled, seeded, finely diced cucumber
  • 1/4 cup finely chopped scallions
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped Italian flat-leaf parsley
