Make pasta and cook until al dente

Drain and rinse thoroughly to cool

Place in large mixing bowl and toss with olive oil

Add the remaining ingredients and combine until thoroughly mixed

Cover and chill for at least 1 hour, then mix again before serving.
GAZPACHO PASTA SALAD
ingredients
- 1 half load pasta dough made into macaroni or shells
- 1/2 cup olive or vegetable oil
- 4 medium, ripe tomatoes, seeded and chopped
- 1/2 cup sliced green onions
- 1/2 cup cucumber, peeled, seeded, and chopped
- 1/4 cup grated Parmesan cheese
- dash of hot pepper sauce
- 1 garlic clove, minced
- 2 tablespoons chopped parsley
- 1 tablespoon wine vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Cayenne pepper to taste
- 1 (6 ounce) can vegetable juice
