Make rotini and cook until al dente

Drain and rinse thoroughly to cool

Place in large mixing bowl and toss with olive oil

Add beans and vegetables to pasta

For dressing, combine cilantro, chicken broth, orange juice, vinegar, cumin and chili powder in a blender

Pour into small bowl and whisk in olive oil

Pour dressing over salad and toss gently

ingredients
- 1 full load pasta dough made into rotini
- 1 tablespoon olive oil
- 1 (15 ounce) can black beans, rinsed and drained (about 1-1/2 cups dried beans, cooked)
- 1 red bell pepper, seeded and diced
- 1 green bell pepper, seeded and diced
- 1 cup peeled jicama, diced
- 1/2 cup diced red onion
- DRESSING:
- 3/4 cup chopped fresh cilantro
- 1/2 cup defatted chicken broth
- 3 tablespoons orange juice
- 3 tablespoons red-wine vinegar
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder, or more to taste
- 1 tablespoon olive oil salt
- chopped chili pepper for garnish (optional)
