    Bring stock to a boil in a medium-size saucepan

    Add carrot and leek

  • 3

    Cover pan, simmer about 5 minutes or until carrot and leek are just tender to the bite

    Stir in chicken, pasta, salt and pepper

    Cook 5 to 10 minutes or until pasta is al dente

  • 6

    Garnish with cilantro, and serve at once.

ingredients

  • 1half load pasta all'uvo made into linguine and cut into 2-1/2 inch pieces
  • 2 quarts chicken broth
  • 2 carrots,cut into thin matchsticks
  • 2 leeks, thinly sliced
  • 3 cups chopped cooked chicken, diced
  • salt and pepper
  • fresh cilantro(optional)
