Preheat oven to 350?F

Butter 14 (2-1/2-inch) muffin cups

Make manicotti according to directions in the Making Pasta chapter

Line each muffin cup with one manicotti forming a ruffled edge

Set aside

In a large skillet, fry sausage over medium heat until cooked, stirring to break up sausage

Cool; crumble and sprinkle evenly in bottom of each Manicotti shell

Remove all fat from skillet except 1 tablespoon

Add onion to skillet

Saute over medium heat until golden

Add beaten eggs, half and half, cheese, flour, salt, pepper and nutmeg

Spoon mixture evenly over sausage into Manicotti shells using about 2 heaping tablespoons in each shell

Sprinkle with paprika

Bake for 15 to 20 minutes

ingredients
- 1 full load pasta dough made into Manicotti
- 1/2 pound lean pork sausage or
- 1/2 pound sliced bacon
- 1/2 cup minced onion
- 4 eggs
- 1-1/2 cups half and half or undiluted evaporated milk
- 1-1/2 cups shredded Swiss cheese
- 1 tablespoon all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon white pepper
- 1/4 teaspoon ground nutmeg
- paprika
