    Make and cook spaghetti in boiling water in a large saucepan

    Drain, set aside and keep warm

  • 3

    For sauce, steam, boil or microwave asparagus until tender

  • 4

    Drain and refresh under cold running water

  • 5

    Cut asparagus into one-inch pieces and set aside

  • 6

    Heat oil in a frying pan and saute bread crumbs over a low heat, stirring constantly, for 2 minutes

    Add milk and asparagus, and cook, stirring occasionally, over a medium heat for 5 minutes

  • 8

    Mix in mozzarella and season to taste with black pepper

  • 9

    Put spaghetti on a warmed serving platter, spoon sauce on and toss gently to combine

  • 10

    Sprinkle with Parmesan cheese and serve immediately.

ingredients

  • 1 full load pasta dough made into spaghetti
  • 2 tablespoons grated Parmesan cheese
  • 1 pound fresh asparagus spears, trimmed
  • 1 tablespoon olive oil
  • 1 thick slice whole grain bread, crumbed
  • 1 cup evaporated skim milk
  • 2 ounces grated mozzarella cheese freshly ground black pepper
