Boil, steam, or microwave pumpkin until tender

Drain and rinse under cold running water and set aside

In a sauce pan, bring cream to a boil, then simmer about 10 minutes until reduced by half

Gently mash together pumpkin, nutmeg and pepper to taste and cook for 2 to 3 minutes longer

Add pumpkin mixture to cream, stir in chives and cook for another 2 to 3 minutes

Spoon sauce over your favorite cooked pasta and serve.

- 1 pound pumpkin cut into strips or
- 1(16 oz.) can unflavoredpumpkin
- 2-3/4 cups cream
- 1/2 teaspoon ground nutmeg freshly ground black pepper
- 1-1/2 teaspoons snipped fresh chives
