Melt butter in a saucepan and cook onion and garlic over a medium heat for 2-3 minutes

Stir in flour and vegetable stock and cook, stirring constantly, for 4 to 5 minutes longer or until sauce boils and thickens

Remove from heat, stir in yogurt and simmer over a low heat for 2 to 3 minutes longer

Mix in parsley, basil and chives and season to taste with black pepper

Spoon over pasta and serve immediately

For an interesting visual effect try using a 1/2 load each of red and green pasta dough made into spiral pasta.
YOGURT HERB SAUCE
ingredients
- 1/2 ounce butter or margarine
- 1 small onion, chopped
- 1 clove garlic, crushed
- 2 tablespoons flour
- 1/2 cup vegetable stock
- 1-3/4 cups natural yogurt
- 2 tablespoons fresh parsley,finely chopped
- 2 tablespoons fresh basil,finely chopped
- 2 tablespoons snipped fresh chives freshly ground black pepper
