In a large pot, saute onion, carrots, and green pep- per in oil over low heat

Stir often, until vegetables are tender but not browned

Add garlic and saute 2 more minutes

Puree the whole tomatoes and add to the sauteed vegetables

Add the tomato sauce then fill the can halfway with water and empty the water into saucepan

Add the basil, oregano, and bay leaf

Simmer, uncovered, for 15 minutes

Lightly brown pork and beef in a skillet over medium-low heat

Skim excess fat and add the meat to the tomato sauce along with drippings from the pan

Simmer sauce and meat, about 1-1/2 hours

Spoon the sauce over cooked pasta.
Bolognese Tomato Sauce

- 2 tablespoons olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped carrot
- 1/2 cup chopped green bell pepper
- 2 garlic cloves, minced
- 1/2 cup white wine
- 1 (2 pounds, 3 oz.) can peeled Italian tomatoes
- 1 (15 ounce) can tomato sauce
- 1 tablespoon chopped fresh,
- or 1 teaspoon dried basil leaves,
- 1/2 teaspoon dried oregano
- 1 bay leaf
- 8 ounces lean ground pork
- 1 pound ground sirloin
- 1 teaspoon salt, or to taste
- 1/4 teaspoon coarsely ground black pepper
