    Make sheets for won ton skins, egg rolls or dim sum using the instructions for filled pasta in the Making Pasta chapter

    If making by hand, mix ingredients and knead the dough for 10 minutes

    Cut dough in half, wrap both portions in plastic wrap, and let rest for about 15 to 30 minutes

    Keep the rolled dough in a square shape then trim edges

  • 5

    Use a straightedge to cut squares for won tons or a plain round cookie cutter for various dim sum such as dumplings or potstickers.

  • 1-1/2 pasta measuring cups all purpose flour
  • 1/2 pasta measuring cup cornstarch
  • 1/2 teaspoon salt
  • 2 eggs
  • 2/3 cup water
