Peel and trim white pith from orange and separate orange segments from membranes

Place white wine, sugar, lemon juice, cinnamon stick, bay leaf, coriander seeds and peppercorns in a 4-quart saucepan, cover and bring to a boil

Simmer for 15 minutes

Strain mixture; discard solids

Return liquid to saucepan and add cranberries, pears, figs, raisins and ginger

Simmer, covered, until fruit is tender, about 10 minutes

Add apples and simmer another 15 minutes

Stir in reserved orange segments and cool to room temperature

Refrigerate up to 1 week. Yield: 3 cups. SUGGESTED USE: Best with shrimp or pork

If you can't find the dried cherries, try it with dried cranberries, often know as craisins.
Winter Fruit Chutney
ingredients
- 1/2 orange
- 1-1 /2 cups dry white wine
- 1 /3 cup sugar
- 1 tablespoon fresh lemon juice
- 1 cinnamon stick
- 1 bay leaf
- 1-1/2 teaspoons coriander seeds
- 1-1/2 teaspoons whole black peppercorns
- 1/2 cup dried cranberries
- 1/3 cup coarsely chopped dried pears
- 1/3 cup coarsely chopped dried figs
- 1/4 cup dark raisins
- 1-1/2 tablespoons minced crystallized ginger
- 1/2 pound apples, peeled and diced
