Place peaches, cherries, onion, maple syrup, honey, vinegar, salt and pepper in a 3 quart saucepan and bring to a boil over medium heat

Lower heat and simmer for 15 minutes

Add the mint and continue to cook for 5 to 10 minutes or until the mixture has thickened slightly

Cool to room temperature and store in the refrigerator up to 2 weeks. Yield: 2-1/2 cups SUGGESTED USE: This intense fruit flavored chutney is at its best with shrimp or pork

If you can't find the dried cherries, try it with dried cranberries, often know as craisins.
Fresh Peach and Dried Cherry Chutney
ingredients
- 3 peaches, peeled and diced
- 1 cup dried cherries
- 1/2 cup chopped onion
- 1/4 cup pure maple syrup
- 2 tablespoons honey
- 1 cup red wine or raspberry vinegar
- 1/4 teaspoon salt
- 1/8 teaspoon white pepper
- 1/4 cup fresh mint leaves
