Drain apricots, reserving 1/4 cup syrup

Cut apricots into 1/2-inch dice

Place butter, sugar, honey, apricot syrup, cinnamon, nutmeg and cloves in a medium sauce pan

Bring to a simmer, stirring until butter is melted and sugar dissolves

Continue to simmer for 2 minutes

Stir in apricots and heat through, another 2 to 3 minutes. Yield: 2 cups SUGGESTED USE: This spiced apricot chutney is delicious served with pork loin coated with the Brown Sugar Cumin Rub (page 138) or any marinade that is slightly spicy.
