Black Bean Salsa

    Place black beans in a medium bowl

    Peel orange and cut into 1/2-inch pieces

    Add orange to beans along with green onions, lime juice and oil

    Toss gently to combine

    Season with salt. Yield: 2 cups SUGGESTED USE: This sweet and sour bean salsa is perfect served with a steak coated with the Spicy Texas Rub (page 127) or the BBQ Rub (page 128).
