Let salsa rest at room temperature for at least 20 minutes before serving. Yield: 2 cups SUGGESTED USE: Spoon this salsa over Pollo Asado (page 51) marinated chicken or Spicy Cilantro Pesto (page 151) smeared chicken or anything else for a fresh spicy flavor.

- 1 to 2 serrano chilies, minced
- 1/2 cup minced red onion
- 3 tablespoons raspberry vinegar
- 2 tablespoons minced fresh cilantro leaves
- 1 /4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
