    Finely chop the olives and sun-dried tomatoes

    Peel garlic and mince

  • 3

    Remove thyme and rosemary leaves from stems and mince

    In a medium bowl combine the olives, sun-dried tomatoes, garlic, thyme, rosemary, olive oil and 2 teaspoons mustard

    Toss in the breadcrumbs

  • 6

    Preheat oven to 400 degrees

  • 7

    Arrange salmon fillets on a parchment lined baking sheet

  • 8

    Spread with remaining mustard and mound breadcrumb mixture on top

  • 9

    Bake until salmon is just done in center, 12 to 15 minutes.

ingredients

  • 1/2 cup Kalamata olives
  • 1/4 cup oil-packed sun-dried tomatoes, drained
  • 3 cloves garlic
  • 3 sprigs fresh thyme
  • 1 sprig fresh rosemary
  • 2 tablespoons olive oil
  • 3 tablespoons Dijon mustard
  • 1 cup panko (Japanese breadcrumbs)
  • 4 (5 to 6 ounce) salmon fillets
