Chop shallots

Cut sun-dried tomatoes in julienne strips

Remove parsley leaves and finely chop

Heat oil in a large heavy skillet over medium heat

Add the bacon and cook until beginning to color, about 6 minutes

- 3 large shallots
- 1/2 cup drained oil-packed sun-dried tomatoes
- 8 sprigs Italian parsley
- 8 slices bacon
- 1 tablespoon olive oil
- 1 cup whipping cream
- 1 pound linguine, cooked and drained
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup toasted pine nuts
- More cheese for passing
