Peel garlic and mince

Chop onion

Cut zucchini and yellow pepper into medium dice

Place sausages in a saucepan and cover with cold water

Boil and then simmer for 10 minutes

Remove sausages and cool slightly

Slice sausages into 1/2- inch thick slices. Heat olive oil in a large pot and add sliced sausages, onion and garlic

Saute until onion is tender and sausages browned lightly, about 5 minutes

Add wine and stir until almost evaporated. Stir in zucchini, pepper, broth, tomatoes with juices, basil, oregano and pepper to taste

Bring to a boil

Add the pastini and cook 20 minutes or until pasta and vegetables are tender

Serve with cheese.
ITALIAN SAUSAGE SOUP
ingredients
- 2 cloves garlic
- 1 medium onion
- 3/4 pound zucchini
- 1 yellow bell pepper
- 1 pound sweet Italian sausage links
- 1 tablespoon olive oil
- 1/2 cup dry white wine or vermouth
- 5 cups chicken broth
- 1 (16-ounce) can diced tomatoes
- 2 teaspoons dried basil
- 1 teaspoon dried oregano
- Freshly ground pepper
- 1/2 cup pastini (tiny Italian soup pasta)
- Freshly grated Romano cheese
